I created a profile and then assigned it a name same as the remote directory. Then I ran Acrosync from the command line using the -p option followed by the profile name. It worked as expected.

Log-rotation happens between syncs, but not during sync.
You can set a registry key that controls how many days' logs to keep: HKCU\Software\Acrosync\AcrosyncClient\LogFileExpirationDay, which defaults to 7.
The retention schedule works as follows:
For backups older than 30 days, one backup every 7 days is kept. For backups older than a day, one backup per day is kept.
Unfortunately it is not configurable at this time.
